chocolate, attitudes and middle school


have i ever mentioned my awesome friend a.j.? i've known a.j. since, well a long time. growing up we went to school together. we used to pass notes to each other in mrs. bobalik's 7th grade english class. (and we never got caught)
a.j. moved to florida, and we just recently found each other on facebook. he knows i love to bake and cook, and tonight he sent me some recipes that looked so delicious i had to make one of them right away.  (enter: 3 minute chocolate mug cake!) super easy, super fast, and super tasty. great for keeping your new years resolution to lose weight..sort of. :)

what you'll need:
coffee mug
4 tablespoons of flour
4 tablespoons of sugar
2 tablespoons of baking cocoa
1 egg
3 tablespoons of milk
3 tablespoons of oil
palmfull of chocolate chips (optional)
small splash of vanilla
**this makes one mug cake**

you'll want to start by choosing your coffee mug. mike bought me this mug for my birthday a few years back. i think he was trying to tell me that sometimes i have an attitude...i made his in a clear tea mug.

put your flour, sugar and cocoa into the mug and stir until mixed
add your egg and stir until well combined. (don't ask why i chose to stir this with a knife...it's just how i roll) use a spoon. it will make your job a lot easier!
add your milk and oil. stir until well mixed. start off stirring slow. otherwise you'll slosh milk and oil onto your counter like i did. oops! also, use a spoon!
add your chocolate chips. i used mint ones. because that is what i had. (thanks kayle!)
add your vanilla and stir. and stir. and stir.
microwave each mug for 3 minutes. (not together!) be careful, the mug will be really really hot.
 not that that stopped me from pulling a chunk off of it and eating it right away. i only burned my mouth a little, don't worry. also, mine turned out a little dry (probably because i sloshed some milk and oil out while stirring), but that can be taken care of by dousing it in hot fudge. or carmel sundae syrup. or whatever else you have on hand.

make one for your friend with the attitude problem, or for the friend who moved away.
