i am now 28.5 weeks pregnant. yep, third trimester, baby. i had my first appointment at my new OBs office today and all i can say is, i love them! Dr.Andino sat and talked to michael and i for over half an hour. he really put my mind at ease. i'm glad we made the switch, i only wish we had done it sooner!

i also have my glucose test tomorrow!
tomorrow the mystery growing in my belly will be revealed!
with that said, i decided to make apple pie egg rolls tonight to celebrate!
you'll need:
3 cups of apples (peeled, cored, and diced)
1 tbsp butter
1/4 cup brown sugar
2tsp cinnamon
5 egg roll wrappers
cinnamon and sugar to coat the egg rolls
(keep in mind that i do everything big, because i feel like 5 egg rolls will definatley not be enough to feed my family. so i think i tripled this recipe when i made mine!)
peel your apples! we used fuji, but you can use whatever kind you like.
core, slice and dice your apples. or if you're lazy like me, get out your mandolin, slap on the juliene blade and go to town. then give then a rough chop. (it just seemed faster this way! i DID do 5lbs of apples!)
melt your butter in a skillet.
add your apples, cinnamon, and brown sugar. cook until apples get soft, stirring often. put them in a bowl and let them cool in the fridge for about 30 minutes.
when the filling is cool, place a scoop of apples on your egg roll wrapper. (about 2tbsp) put them near the corner, because you're going to roll this baby up in just a second.
fold in the corners and wet with water, or egg wash (i used an egg, see the yellow?) don't forget to egg wash the end of the wrapper either, or it won't stay closed when you roll it!
roll them up!
heat a few inches of veggie oil in a skillet and fry your egg rolls for a few minutes on each side.
then toss them into your sugar/cinnamon mix. coat them well!
om nom nom nom! do those look delicious or what?!
you can also make mini apple pies the same way, just use wonton wrappers and fold them into triangles! the kids just loved them, with a scoop of chocolate ice cream of course!
and if you're feeling really adventerous like i was tonight, go ahead and make some apple cheesecake egg rolls! just put some sweetened cream cheese (mix softened cream cheese with sugar and a little vanilla) down on your egg roll wrapper before you add the apples.
