tasty tuesday {granny b's pecan pie}


let me be clear: i have NEVER liked pecan pie. shocking to those of you who know me, because i love pie something fierce. pretty much more than anything. not so with pecan. i have a vague recollection of being forced to eat pecan pie when i was younger, and have held a grudge against it ever since.

remember Matthew? (he gave me that wonderfully awesome collection of recipes) he has raved about this pie a few times, and his taste in food pretty much mirrors mine..so i figured i'd end my 15 year grudge and bake my first one..(ok, so i baked two of them)

the first forkful was absolute heaven. it evoked blissful sigh, after blissful sigh. my eyes rolled back in my head and i nearly went into a coma from pure awesomeness.

dangerous pie. how i love you.

Granny B's Pecan Pie
(makes one pie)

one pie crust
1 cup chopped pecans
1/2 cup light corn syrup
1/2 to 1 cup of sugar (depending on how sweet you want it) i used 3/4 cup
2 eggs
1 tbsp flour
1 tbsp butter-softened
1-2 tsp of vanilla

beat eggs until they are lemon in color. add sugar, flour, and corn syrup. mix. add butter and vanilla, mix, fold in nuts. pour into unbaked pie shell and bake at 300 degrees for 45 minutes to 1 hour.

so simple. so sweet. so nutty.
so nom.
